Bamboo Sushi Unveils New ASC Certified Seafood Dish for Earth Month Collaboration

 100+ Guests Celebrate Bamboo and ASC’s Shared Commitment to Responsible Seafood at Exclusive Portland, Ore. Kickoff Event

Bamboo Sushi – the world’s first certified sustainable sushi restaurant and one of the most respected sushi establishments in the Western U.S. – last week joined the Aquaculture Stewardship Council (ASC) to officially kick-off a special Earth Month promotion showcasing their shared commitment to responsible seafood. 

Throughout the April-long campaign, Bamboo will feature ASC-certified seafood on its menus, as well display ASC educational materials about the benefits of responsibly raised seafood at all Bamboo locations in Portland, Seattle, Denver, and the Bay Area, online at bamboosushi.com, and via social media. ASC will amplify the promotion locally and nationally.

A Seafood Soirée for Certified Sushi

To launch the promotion, Bamboo and ASC on April 4 hosted “Sea Green, Be Green: The Certified Seafood Experience,” a sushi-filled, standing-room-only celebration at Bamboo’s iconic NW 23rd St. location in Portland. The invite-only event welcomed more than 100 area food media and social influencers, seafood industry NGOs, producers, distributors and retailers joining to taste and learn about Bamboo and ASC’s shared commitment to educating the community about responsible aquaculture.

With a DJ spinning wax and anticipation in the air, Bamboo’s talented team debuted their all-new, Earth Month signature dish: Hawaiian Kanpachi Crudo. Presented by Bamboo Sushi’s Chief Culinary Officer Jin Soo Yang and Corporate Executive Chef Elijah Lehrer, Hawaiian Kanpachi Crudo is bright and refreshing with bold flavors and a hint of heat. The curated creation is anchored by ASC-certified Hawaiian Kanpachi from Blue Ocean Mariculture.

The coconut curry and charred pineapple-laden dish will be available through April 30 only.

Additional event speakers included Bamboo Sushi’s COO Connie Collins, Blue Ocean Mariculture CEO Dick Jones and ASC’s North American Marketing leaders Mark Lang and Athena Davis.

“Sea Green, Be Green: The Certified Seafood Experience” is the first of more than a dozen local market events ASC is conducting throughout the year in Portland, Ore., Southern California and Washington, D.C. In the second year of its multiyear national campaign, ASC is building on the success of 2022’s activations to further increase awareness, understanding and demand for its sea green label and certification program among culinary influencers, retailers and home cooks.
