Greek Inspired Cobia Skewers with Tahini Butter

- (2) 6 oz. portions of ASC-labeled Fish Fixe Cobia
- 3-4 kabob skewers
- Red onion sliced into uniform 1″ pieces
- Cherry tomatoes
- 1/4 cup Extra Virgin Olive Oil
- 1 tbsp chopped garlic
- 1 tbsp chopped dill
- 1 tsp kosher salt or sea salt
- 1/2 tsp oregano (dried) or if fresh double
- 1 lemon zested into strips
- 1/2 tsp ground cumin
- 1/4 tsp red pepper flakes
- 1/4 tsp black pepper
Cobia Marinade
- 1/4 c tahini
- 3 tbsp lemon juice
- 1/2 c melted, unsalted butter
- 1/2 tsp salt + pepper

Serves: 2-3Greek-Inspired Cobia Skewers with Tahini Butter will take you to the Mediterranean. Complete with an herb rich, flavorful souvlaki marinade. Grill the kabobs or bring them inside to your broiler, either way you will be wowed by this simple recipe.
- Prepare (2) 6 oz portions of Fish Fixe Cobia (http://www.shop.fishfixe.com/) according to package
instructions - Turn oven on broil
- Place rack 6″ from broiler
- Dice Cobia into uniform 1″ cubes
- Mix together all Cobia Marinade ingredients and marinate Cobia for 30 minutes
- Next thread Cobia, red onion and tomatoes onto skewers
- Place kabobs on broiler pan, with tops of kabobs about 5″ from broiler
- Broil for 4 minutes, then shake and return
- While kabobs are broiling, mix together the ingredients for Tahini Butter
- Cook 1-2 more minutes or until cooked through
- Once kabobs are complete, plate with Quinoa and use the Tahini Butter for dipping
