Green Goddess Pasta Salad with Salmon

- 8 oz ASC labeled smoked salmon
- 7 oz rigatoni pasta
- 1 ripe avocado
- 7 oz Greek yogurt
- 1 garlic clove, grated
- 1 tbsp freshly squeezed lemon juice
- 2 tbsp finely grated lemon zest
- 1/4 cup spinach
- 1 tbsp basil leaves
- 1/2 tbsp parsley
- Salt and pepper to taste

Serves: 5- Cook the pasta in salted water. Drain and quickly rinse under cold water to cool.
- Scoop out the avocado. Blend the avocado, yoghurt, garlic, lemon juice, lemon zest, spinach, half the basil, parsley, 1/2 tsp salt, and 1/2 tsp black pepper using a stick blender or food processor until smooth and creamy.
- Combine the pasta with the dressing and season to taste with salt and pepper. Top with the smoked salmon and the remaining basil.
