- 3-4 garlic cloves, diced
- 2 tbsp butter
- 4 cups washed and dried spinach, with 2 cups chopped
- 4 ASC certified salmon fillets
- 2 sheets of puff pastry
- 1 egg, beaten for egg wash
- Zest of one lemon, grated
- 3 oz cream cheese

Serves: 4- Heat pan over medium-high and add butter. Add garlic and fry for one minute, stirring regularly.
- Add the 2 cups of chopped spinach and cook, stirring into garlic, for a few mins until it’s wilted down. Squeeze any excess water out after cooking.
- Combine cooked spinach and the last 2 cups of whole fresh spinach leaves with grated lemon zest and 3 oz of cream cheese in a large bowl. Mix well.
- Lay 4 ASC salmon fillets out on one half of a sheet of puff pastry, leaving a little less than 1 inch rim.
- Top the salmon with spinach cream cheese mix and brush egg wash along the sides of the pastry.
- Fold up the other half of puff pastry so the salmon is covered. Use a fork to press down the edges of the pastry to seal. Brush all over with egg wash then cook for 30 mins until pastry is golden and salmon is cooked through.
