Shrimp skewers with red onion and herbs

- 12.5 oz ASC labeled shrimp
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 3 garlic cloves, finely grated
- 2 small red onions, cut into wedges
- 2 tbsp cilantro, roughly chopped
- 2 tbsp mint, roughly chopped
- 1 tbsp flat leaf parsley, roughly chopped
- Freshly ground black pepper

Serves: 4- Add the shrimp to a bowl.
- Pour 2 tbsp olive oil, 1 tbsp vinegar and the garlic into a bowl, season with black pepper and whisk to combine.
- If you have time, leave the shrimp to marinate for up to 30 minutes.
- Thread onto metal skewers (or soaked wooden skewers), adding in a wedge of red onion every 3-4 shrimp.
- Pour any juices left in the bowl over the shrimp skewers.
- Tip the herbs into a separate bowl, then add the rest of the oil and vinegar and stir to combine.
- Turn on the grill until hot or add to a stovetop pan.
- Cook the shrimp skewers on the grill until pink and hot through, cooking with the herb dressing.
- Stack onto a plate and spoon the remaining herb dressing over the top.
- Serve right away!
