Smoked salmon avocado toast

- Sourdough rye bread (or dark rye with pumpkin or sunflower seeds)
- 1/2 ripe avocado
- Half a lemon, juiced
- One pickled beet, chopped
- 3 radishes, cut lengthwise
- 6 oz or package of ASC labeled smoked hot or cold smoked salmon
- 1 1/2 tbsp crème fraîche or sour cream
- 1/2 tbsp hot horseradish sauce
- 1 scallion or green onion, finely sliced
- 1 tbsp fresh dill, chopped
- Any other herbs or seasonings of your choosing!

Serves: 2- Slice the bread
- Mash the avocado with half the lemon juice and season well with salt and pepper
- Spread the avocado on the bread, then place the flaked salmon and beetroot on top
- In a separate bowl, mix the remaining lemon juice with the crème fraîche (or sour cream) and horseradish. Season and mix well.
- Drizzle crème fraîche (or sour cream) mixture over the sandwich and top with scallions, chopped dill and any other herbs of your choice!
- Devour!
