- 4 ASC labeled Branzino fillets
- 1 1/4 cup capers
- 1/2 cup pine nuts
- Large handful of basil, about 20 leaves, chopped
- 1 1/2 garlic cloves
- 1/2 tbsp fresh thyme
- 7 tbsp olive oil
- 2 carrots, julienne or grated
- 2 radishes, diced
- Salt and pepper to taste

Instructions / Directions
Serves: 2- Place all ingredients for the pesto in a blender, mix. Leave a few basil leaves out for garnish.
- Place parchment paper on a sheet pan. Spread the pesto over the fillets on the skin side and place them in the pan. Bake in the oven at 350°F for 20 minutes.
- Serve the fish fillets a salad of carrots and radishes on the side.
